Pappardelle (Tallarines) en Salsa de Crema de Limón con Espárragos y Salmón Ahumado / Pappardelle in Lemon Cream Sauce with Asparagus and Smoked Salmon

INGREDIENTES

400 gr. de espárragos
2 chalotes grandes o Cebollas y Ajos
2 limones
80-100 gramos de salmón ahumado en rodajas (opcional)
400 gr pappardelle o fettuccine o Tallarines
3 cucharadas de mantequilla sin sal
3 / 4 taza de crema de leche

 

PREPARACION

Cortar los espárragos y cortar en rodajas como 6 cm en diagonal. Picar la cebolla y los ajos. Hacer ralladura de limón suficiente como para  1 1 / 2 cucharaditas y exprimir el jugo suficiente como para  3 cucharadas. Cortar el salmón en tiras.

En una olla con agua y con sal cocine los espárragos en agua hirviendo hasta que estén tiernos o a su gusto. Escurrir los espárragos y dejar de lado algunas puntas de espárragos para adornar.

En una sartén freír las cebollas y el ajo en mantequilla con sal y pimienta al gusto a fuego moderadamente bajo, revolviendo, hasta que se ablande. Agregue la crema y la ralladura de limón y cocine a fuego lento, revolviendo ocasionalmente, hasta que espese un poco, unos 10 minutos. Agregue 2 cucharadas de jugo de limón y retirar la sartén del fuego. Cocine la pasta en agua hirviendo, revolviendo ocasionalmente, hasta que esté al dente y reserve 1/2  taza de agua de pasta. Escurrir la pasta en un colador apartar y parar la cocción.  Agregar la 1 / 2 taza de agua la pasta y 1/2 taza de agua donde se cocinaron los espárragos a la salsa, agregar las tiras del salmón. Caliente la mezcla a fuego lento por 10 min. Servir la pasta en un plato y agregarle la salsa por encima a su gusto. Adornar con las puntas de los espárragos.

INGREDIENTS

1 pound asparagus

2 large shallots

2 lemons

1/4 pound sliced smoked salmon (optional)

1 pound dried pappardelle or fettuccine

3 tablespoons unsalted butter

3/4 cup heavy cream

PREPARATION

Trim asparagus and diagonally cut into 1/4-inch-thick slices. Finely chop shallots. Finely grate enough lemon zest to measure 1 1/2 teaspoons and squeeze enough juice to measure 3 tablespoons. Cut salmon into 2 x 1/2-inch strips. Fill a 6-quart pasta pot three fourths full with salted water and bring to a boil for asparagus and pasta. Have ready a bowl of ice and cold water. Cook asparagus in boiling water until crisp-tender, about 3 minutes, and with a slotted spoon transfer to ice water to stop cooking. Reserve water in pot over low heat, covered. Drain asparagus and set aside some asparagus tips for garnish. In a deep 12-inch heavy skillet cook shallots in butter with salt and pepper to taste over moderately low heat, stirring, until softened, about 5 minutes. Stir in cream and zest and simmer, stirring occasionally, until slightly thickened, about 10 minutes. Stir in 2 tablespoons lemon juice and remove skillet from heat. Return water in pot to a boil. Cook pasta in boiling water, stirring occasionally, until al dente and ladle out and reserve 1 cup pasta water. Drain pasta in a colander and add to sauce with asparagus, 1/2 cup pasta water, three fourths salmon, remaining tablespoon lemon juice, and salt and pepper to taste. Heat mixture over low heat, gently tossing (and adding more remaining pasta water as needed if mixture becomes dry), until just heated through. Serve pasta garnished with reserved asparagus tips and remaining salmon.

Cacerola de Pollo con Vegetales y Crema de Champiñones con Papas Fritas / Chicken Casserole with Vegetables and Cream of Mushroom with French Fries

INGREDIENTES

 

  • Pechuga de Pollo
  • Vegetales (Brócoli, Cebollas, Zanahorias, Pimentones, Cebollín, Ajo Porro, Celeri)
  • Ajos
  • Perejil y cilantro
  • Crema de Leche
  • Champiñones
  • Ají Dulce
  • Jengibre
  • Salsa Inglesa
  • (Pimienta, Orégano, Paprika, Sal, Nuez Moscada, otras a su gusto)
  • Aceite de Sésamo y de Oliva
  • 2 cucharaditas de Harina.
  • Caldo de Vegetales
  • Pan rallado.
  • Mantequilla
  • Queso Pecorino o Parmesano rallado.
  • PREPARACION

    En una olla colocar mitad agua y mitad caldo de vegetales, (puede ser agua con un cubito de caldo de vegetales), picar en trozos grandes y cubitos los vegetales y agregar al agua con el caldo, y media cucharadita de aceite de sésamo. Cocinar hasta que hierva, apagar fuego y dejar cocinar con el calor del hervor. Aparte picar la pechuga de pollo en cubos y marinar con salsa inglesa y una mezcla triturada de perejil, cilantro, especias y ajo por 15 min. CREMA DE CHAMPIÑONES: Picar una cebolla en trozos pequeños y 1 diente de ajo también en trozos pequeños y freír en mantequilla hasta que estén dorados, agregar 2 cucharaditas de harina y revolver, agregar la crema de leche, pimienta al gusto, nuez moscada recién rallada, sal, revolver, agregar después los champiñones previamente salteados en mantequilla, cebollas y ajos y un poco de vino blanco, poner aparte. Precalentar el Horno a 350º F.. En una Sartén que se pueda poner en el horno después, freír en aceite de Oliva los cubos de pollo con ají dulce picado, jengibre picado hasta que estén dorados 5 min más o menos. Colar los vegetales cocinados sobre el pollo, mezclar, agregar la crema de champiñones hasta que cubra la mezcla, agregarle queso pecorino o parmesano rallado y después cubrirlo bien con pan rallado, agregar trozos de mantequilla alrededor, tapar y llevar al horno por 40 min, dejar en el horno 5 min más para que dore el pan. Servir con Papas Fritas.

    • Vegetables (broccoli, onions, carrots, peppers, chives, leek, celery)
    • Garlic
    • Parsley and coriander
    • Cream Milk
    • Mushrooms
    • Sweet Pepper
    • Ginger
    • Worcestershire sauce
    • (Pepper, Oregano, Paprika, Salt, Nutmeg, others as you like)
    • Sesame and oil Olive
    • 2 teaspoons of flour.
    • Vegetable Soup
    • Bread crumbs.
    • Butter
    • Pecorino or Parmesan cheese grated

    PREPARATION

    In a pan with half water and half vegetable broth (can be water with a vegetable bouillon cube), chopped into large pieces and diced add the vegetables, and half a teaspoon of sesame oil. Cook until it boils, turn off heat and let cook in the heat of boiling. Besides chopping the chicken into cubes and marinate in Worcestershire sauce and a crushed mixture of parsley, cilantro, coriander, spices and garlic for 15 min. CREAM OF MUSHROOMS: Chop an onion and 1 chopped clove of garlic also chopped and fried in butter until golden, add 2 teaspoons of flour and stir, add cream of milk, pepper, freshly grated nutmeg , salt, stir, then add previously fried mushrooms in butter, onions and garlic and a little white wine, set aside. Preheat oven to 350 º F.. In a skillet that can be put in the oven then fried in olive oil with chicken cubes, chopped sweet pepper, chopped ginger until golden brown about 5 minutes. Drain the cooked vegetables over the chicken, mix, add cream of mushroom until it covers the mixture, add grated Parmesan or pecorino cheese and then cover it with bread crumbs, add pieces of butter around, cover and bake for 40 min, leave in oven for 5 more minutes to brown the bread. Serve with French Fries.

    Pollo en Vino con Champiñones y Papas / Chicken in Wine with Mushrooms and Potatoes

    Ingredientes

    3 cucharadas de aceite de oliva
    2 o 3 rebanadas de tocino grueso y picado en trozos grandes
    Pollo, cortado  en  pedazos
    Un puñado de harina, sazonada con sal y pimienta al gusto
    Champiñones Cortados en trozos grandes
    Zanahorias  cortadas en cubos
    2 dientes de ajos, pelados y picados
    1 cebolla grande
    1 Tasa de vino tinto (Sirve Blanco, también)
    1 taza de caldo de pollo
    1 hoja de laurel
    2 ramitas de tomillo

    Preparación

    Calentar el aceite de oliva en una olla grande a fuego medio-alto. 1. Agregue el tocino y cocinar hasta que estén crujientes. Pasar a un plato grande.
    2. Agitar los trozos de pollo con la harina sazonada en una bolsa de plástico.
    3. Dorar, el pollo en la olla, de 4 a 5 minutos por lado.
    4. Saltear los champiñones, las zanahorias, el ajo y la cebolla en la olla hasta que tornen marrones.
    5. Vierta la mitad del vino en la sartén y cocine a fuego alto durante unos 8 minutos.
    6. Añadir el caldo y el vino restante. Llevar a ebullición y añadir el pollo, el tocino y las hierbas.
    7. Volver a ebullición, tapar y cocinar a fuego lento durante 45 minutos. Retire la hoja de laurel y el tomillo y servir

    Ingredients

    3 tablespoons olive oil

    2 or 3 thick slices bacon, roughly chopped

    1 (4-pound) chicken, cut into six pieces

    1 handful flour, seasoned with salt and pepper to taste

    8 to 10 ounces button or cremini mushrooms, rinsed and halved (optional)

    20 whole baby carrots, cut in half

    1 clove garlic, peeled and minced

    2 large sweet onions, chopped, or 2 cups pearl onions

    1 bottle red wine (white works, too)

    1 cup chicken broth

    1 bay leaf

    2 sprigs thyme

    Preparation

    1. Heat the olive oil in a large pot over medium-high heat. Add the bacon and cook until crisp. Transfer to a large plate.

    2. Shake the chicken pieces with the seasoned flour in a paper or plastic bag.

    3. Brown the chicken in the pot, 4 to 5 minutes per side. Transfer to the plate with the bacon.

    4. Sauté the mushrooms (if using), carrots, garlic, and onions in the pot until they just begin to brown, 5 minutes.

    5. Pour half the wine into the pan and cook over high heat for about 8 minutes.

    6. Add the broth and the remaining wine. Bring to a boil and add the chicken, bacon, and herbs.

    7. Return to a boil, then cover and simmer for 45 minutes. Remove the bay leaf and thyme and serve
